I have made rice pilaf many times, and many different ways. Each time, it hasn’t come out bad, but it always missed something. Finally, I asked my mother to give me her official recipe. Turns out, I was totally over thinking it!
This rice pilaf really is perfect. My grandmother learned how to make it from her Armenian mother in law. The pilafis easy to make, buttery and delicious, and works as a side dish with so many different mains!
perfect rice pilaf
- 2 T unsalted butter
- 1 c orzo
- 1 c rice
- 4 c low sodium chicken broth
- 1 t salt
- 1/2 t pepper
Melt butter in a pot over medium high heat. Add the orzo and rice, and stir to coat in the butter. Cook on medium high heat until they start to turn golden brown.
Pour in your chicken broth and stir in the salt and pepper. Bring the pot to a boil, and reduce heat to medium low. Cover pot, and allow to cook until all the chicken broth has absorbed, or about 15 minutes.
