Spinach is one of those side dishes that were always a go-to in our family, and for holidays, it would still hold a spot at the table. We would just dress it up a little. Dress it up into breaded spinach, with some breadcrumb and parmesan.
I like going to spinach as a side dish because it is so easy to put together, I keep the ingredients (frozen spinach) on hand at almost all times, and Ryan and I just both really like spinach. You can absolutely make this recipe with fresh spinach. Just cook the spinach down in the olive oil until it is completely wilted. You may need to add a little chicken broth to the pan.
- 2 packages 10 oz each frozen spinach
- 3 T extra virgin olive oil
- 2 T finely diced garlic
- 1/2 T salt
- 1/2 t pepper
- 1/8 c unseasoned bread crumbs
- 1/8 c grated parmesan
- chicken stock if needed
Defrost spinach. Squeeze out excess water. Set aside in paper towel lined bowl.
In a large skillet, heat oil over medium heat. Add garlic, and stir to coat. Add spinach to the skillet and season with salt and pepper. Stir to mix. Cook for 5 minutes stirring every so often.
Stir in bread crumbs and parmesan. If the spinach seems dry, add chicken stock, 1 tablespoon at a time.
