
tomato and cucumber salad
Every time I see a pretty tomato, I think about this salad.
My boyfriend, Ryan’s mother makes this salad and he just loves it. I remember the first time he suggested I make it. I didn’t feel like spending too much time cooking, so we decided on a tomato salad, rotisserie chicken, and fresh crusty bread to mop up all of the good juices from the salad. Ryan likes when I add too much olive oil to the dressing because we have extra juice to dip the bread in. It is a wonderful thing.
This salad makes an excellent fresh side dish, or it also serves well as an appetizer. Put a bowl on the table with some mozzarella on the side and a sliced baguette. Maybe have some cured meats. Maybe have a glass of wine… or two…

tomato and cucumber salad
ingredients
- 1 large cucumber peeled
- 3 c tomatoes deseeded and chopped in large pieces
- 1/2 red onion diced
- 1 T salt
- 1 t pepper
- 1 T garlic powder
- 1/8 c balsamic vinegar
- 1/3 c extra virgin olive oil
- 1/8 c fresh basil torn or sliced ribbons
instructions

Cut cucumber lengthwise, cut each piece lengthwise again, and then slice into bite size pieces.

Combine all ingredients up, and including extra virgin olive oil in a large bowl. Once mixed well, sprinkle basil on top.
