Gosh, how did I live my life for over 3 decades not knowing that I could make a slow cooker pumpkin spice latte? My life quality has definitely improved now that I know how easy it is to make a mug full of fall happiness. Top it off with whipped cream and a cinnamon stick? Now were getting fancy.
I am one of those girls that got a pumpkin spice latte at Starbucks the first day it came out. Did I sweat on the way back to my training in the 85° weather? Yes. Was I okay with it? Absolutely.
But now, I can be festive for fall in my apartment. Make a PSL, watch some Hocus Pocus, and hang out in my mermaid tail snuggie.
This recipe is amazing for holiday mornings, Thanksgiving desserts, or for just hanging out with friends. Because all the, “cooking,” (other than making the coffee,) is done in the slow cooker, is super simple to make, quick to clean up, and the ingredients are simple to find. Enjoy!
- 5 1/2 c strong coffee
- 3/4 t ground cinnamon
- 1/2 t ground ginger
- 1/8 t ground cloves
- 1 pinch nutmeg
- 1/4 c pureed pumpkin
- 1 t vanilla extract
- 2 1/2 c 2% milk
- whipped cream
- ground cinnamon
- cinnamon sticks
In the bowl of the slow cooker, pour the coffee and mix in the spices. Whisk in the pumpkin and vanilla extract until well combined. Mix in milk.
Cook on high for 2 hours or low for 4. Stir every hour. Serve immediately.
