The last time I had my friends over for dinner, these slow cooker pulled chicken parm sliders were a huge hit! I love having friends over and cooking for them… but there is nothing worse than missing out on all the fun because you are stuck in the kitchen!
Whenever I have visitors, my goal is to serve food that can be made in advance, and just needs some minor assembly once it is time to eat. Meals that involve slow cookers are perfect for cooking delicious, hot, no-fuss food. This recipe checks all of those boxes. I mean, most of the work is assembling the sandwiches!
Everything that you love about chicken parmesan, in an easy to eat slider!
- 1.5 lb boneless skinless chicken thighs
- salt and pepper
- 1 qt marinara *
- 12 slider buns
- shredded mozzarella cheese
Season the chicken thighs with salt and pepper. Place in slow cooker and top with marinara. Cook on low for 4-5 hours, or high for 2-3 hours.
Remove the chicken from the slow cooker, and shred. Return the chicken to the slow cooker and stir to mix the chicken with the sauce. Keep slow cooker on warm setting until ready to assemble.
To assemble the sliders, place chicken in marinara sauce on top each bottom bun and top with mozzarella cheese. Place top bun on the sliders and the cheese will melt from the chicken's heat.
*No time to make marinara from scratch? Store bought works fine! My favorite brand for this recipe is Barilla.
