These rolo cookies are so freaking delicious, I sometimes get embarrassed when people ask me how to make them. They require four ingredients, and one of them is boxed cake mix! But, whatever. Rolo cookies are delicious and I am not sorry.
Rolo cookies are the perfect chocolate treat. The rolos almost melt into the cookie, and you get a gooey piece in every bite!
This cookie dough doesn’t require being chilled before, but some do say that it makes the dough easier to handle when forming the balls around the rolos. I just spray my hands with cooking spray and it works just fine.

Recipe by Six Sister’s Stuff
- 1 box Devil’s food cake mix
- 2 eggs
- 1/3 c vegetable oil
- 1 package rolos
- confectioner’s sugar, for rolling
Preheat oven 350°. Line baking sheets with parchment paper.
In a large bowl, mix the cake mix, oil, and eggs.
Lightly spry hands with cooking spray to keep the dough from sticking. Scoop a small amount of dough and form a ball around each rolo, rolling it in your hands. Roll each cookie ball in the confectioner’s sugar. Place on baking sheets.
Bake until starting to get firm, about 7-8 minutes. Allow cookies to cool on baking sheets before removing with a spatula.
