Orecchiette with sausage and broccoli rabe involves one of my favorite food pairings: sausage and broccoli rabe. They’re an even better match than peanut butter and jelly. Salty and spicy (or sometimes sweet) sausage with bitter greens… such a tasty combo.
I like to just serve them other own as an appetizer or side. With some garlic toast, or alone. Or on top of of some polenta. And always topped with some freshly grated parmesan cheese!
So, for this recipe, we will be adding this perfect pairing to some pasta. What can be better than that? This is a great weeknight dinner that you can prepare in less than 30 minutes, with very little fuss.
One dish pasta dinners are a weeknight staple for us. They’re quick and easy to make, and you can packing it up for a work lunch the next day in a snap. One dish pasta dinners are also no sweat for making ahead dinners. I will usually prepare everything but the pasta. When you’re ready to have dinner, quickly boil some pasta, heat the prepared ingredients, and combine. Dinner in 15 minutes!
orecchiette with sausage and broccoli rabe
- 1 lb orecchiette, or short cut pasta
- 4 T extra virgin olive oil
- 6 cloves garlic peeled
- 1 lb spicy sausage, removed from casings
- 1 bunch of broccoli rabe, trimmed and long pieces cut in half
- Salt and pepper
- crushed red pepper, optional
- freshly grated parmesan, optional
Fill a large pot ¾ full of water and salt it well. Bring to a boil and cook pasta according to package directions. Cook until al dente.
While the pasta cooks, pour olive oil in a large skillet and heat over medium. Add garlic and cook until it turns a light golden brown. Lower heat to low, and cook for 5 more minutes.
Remove the garlic from the skillet and raise the temperature to medium high. Add the sausage and cook until completely browned, breaking it up as it cooks.
In a separate pot, bring salted water to a boil. Prepare a large bowl of ice salty water on the side. Boil the broccoli rabe for about 5 minutes, or until just cooked. Remove from pot and place in the ice bath.
Drain pasta and stir into the skillet with the broccoli rabe. Taste for seasoning, and add salt and pepper if needed. Top with crushed red pepper and parmesan if you are using. Turn the stove off after all is combined.
