This easy Italian barbecue meatloaf is similar to a classic meatloaf, but with extra flavor packed inside! The meatloaf mix includes lots of garlic, fresh parsley, diced tomatoes, parmesan, and barbecue sauce. Yep.. all those Italian flavors and… barbecue sauce. Adding barbecue sauce in the mix and brushing it on top adds the perfect amount of sweetness and gives the meatloaf a nice caramelized crust.
When making this easy Italian barbecue meatloaf mix, be sure to not overwork the beef mixture. Over-mixing can cause the meatloaf to get too dense and less tender. I like to use only my left hand when mixing the meatloaf, (I’m a righty,) because I tend to pay more attention, and I am more careful!
easy Italian barbecue meatloaf
- 1 lb 80/20 ground beef
- 1 c plain breadcrumbs
- 1/2 c diced onion
- 4 cloves garlic, finely minced
- 1 c chopped fresh parsley
- 1 14 oz can diced tomatoes, drained well
- 1/2 c grated Parmesan cheese
- 2 eggs
- 1 1/2 t Kosher salt
- 1/2 t black pepper
- 1/2 c barbecue sauce, divided, like my sweet and tangy barbecue sauce
Preheat oven to 350° F. Spray a large baking sheet with cooking spray, and set aside.
In a large bowl, with clean hands, gently mix ground beef, bread crumbs, onion, garlic, parsley, tomatoes, parmesan, eggs, salt, pepper, and 1/4 c of the bbq sauce until just combined. Transfer the mixture to the baking sheet, and form into a rectangular loaf on the baking sheet, about 9 by 6 inches.
Brush the top of the meatloaf with the remaining 1/4 c of barbecue sauce. Bake the meatloaf for 1 hour, or until the center reaches 160° and the bbq sauce is caramelized and browned.
Allow meatloaf to rest for 15 minutes before slicing and serving.
