Duck fat potatoes are a perfect side dish for a special meal. They’re crispy on the outside, creamy on the inside, and perfectly seasoned with salt and fresh herbs. The duck fat really adds a richness to the potatoes without making them greasy at all!

ingredients
- 3 lbs baby potatoes
- 1/4 c duck fat, melted
- 3 t flaky sea salt, like Maldon
- 1/2 t ground black pepper
- 2 T chopped fresh thyme
- chopped fresh parsley, for serving
instructions

Preheat oven to 450° F.

In a large bowl, toss the potatoes with the duck fat, salt, pepper, and thyme. Transfer to a baking dish, and roast for 40 minutes, or until potatoes are golden crisp, and fork tender. If the potatotes brown too quickly, cover with aluminum foil.

Allow to cool for 5-10 minutes before serving. Top with chopped parsley.
