Did you know that you can make hot, crispy, bubbly, chewy pizza at home? Did you know that you can do this in less than 30 minutes? Did you know you could make this pizza in your cast iron skillet?
Well, you can. And now you know. You’re welcome.
Ever since I learned this recipe from Bon Appetit, I have been sure to keep ingredients on hand, and in my freezer at all times: pre-made pizza dough, a ball of mozzarella, and a pint of marinara.
Be sure to do ALL of your prep work before starting to cook. Once that dough hits your skillet, the cooking is all going to be very fast. Shred all of that cheese. Have your cheese shredded, marinara ready to pour, and honey nearby.

- 1 lb prepared pizza dough
- semolina flour for sprinkling
- olive oil for brushing
- 1/4-1/2 c marinara
- 2-3 c shredded mozzarella cheese
- 2 T honey
- chili flakes, (optional)
- sausage and peppers
- prosciutto and arugula
- options are endless!
Preheat oven to 525° F, or as hot as it will go.
Ensure all ingredients are prepped: marinara is ready to spoon, cheese is grated, toppings prepared.
Stretch out dough into a large, flat disc.
Heat your 12 inch skillet over medium high heat. Once hot, sprinkle your semolina flour over the surface of the pan. Stretch the dough over the skillet. Be careful not to burn your fingers! Place the dough in the skillet and pull it up the sides of the edges, incase it gets a little droopy. Brush the dough with olive oil. Season with salt and pepper.
This dough is going to cook quickly. Once you see it start to bubble, spoon your marinara over the top of the dough and spread it out. Don't be shy with your sauce! Spread it close to the edges. If you end up getting sauce on the crust, it will caramelized and sweet and delicious.
Sprinkle your cheese over the marinara. Add any toppings that would need to go in the oven, (most meats, mushrooms, peppers, etc.)
Place skillet in the oven, (use oven mits- don't touch that skillet with bare hands!) Bake for 10-15 minutes, or until the cheese is golden and bubbly.
While the pizza is still hot, brush the crust with a combination of honey, chili flakes, and water (that have been whisked together). If you have Mike's hot honey on hand, use that!
Cut and serve immediately.
