
beefy bacon and bean casserole
Okay, so I really hesitated to post this recipe. Beans are probably one of the most un-fabulous things to make, and making a casserole out of them doesn’t exactly make them sound any sexier. But hear me out. Every barbecue should have this recipe.
The last time I threw a “barbecue”, this was the dish that my friends talked about the most. They loved it! I mean, a dish full of beans doesn’t raise people’s expectations too much, and this casserole just blew everyone’s expectations away.
If you are wondering why I put barbecue in quotations, its because we threw a party in my little Hoboken apartment kitchen and made barbecue food. And we called it a barbecue.
But anyways, back to the beans. This casserole is the perfect thing to bring to any barbecue, or potluck serving barbecue. You have the baked beans that are a staple for the meal, the perfect added texture from the bacon and ground beef, and the sweetness from the molasses is just out of this world. It can seriously even serve as a main dish with some sides. It’s that satisfying and THAT GOOD.
These ingredients are all probably in your pantry already. Next time you make some sticky drumsticks or barbecue ribs, add this casserole to your meal. You won’t be disappointed!

beefy bacon and bean casserole
ingredients
- 1/2 lb bacon, diced
- 1 small onion, diced
- 1/2 lb ground beef
- 1 14.8 oz can pork and beans
- 1 15 oz can lima beans, rinsed and drained
- 1 15 oz can kidney beans, rinsed and drained
- 1/2 c barbecue sauce
- 1/2 c ketchup
- 1/2 c sugar
- 1/2 c light brown sugar, packed
- 2 T prepared mustard
- 2 T molasses
- 1 t salt
- 1/2 t chili powder

Preheat oven to 350° F. In a skillet over medium-high heat, begin cooking the bacon. Once the fat starts melting, (at least 1 T), add the onion and ground beef. Cook until the meat is no longer pink.

In a large bowl, combine the 3 cans of beans. In a separate bowl, mix together the rest of the ingredients. Mix the meat mixture and sauce into the bowl of beans. Pour into a casserole dish.

Cover and bake for 45 minutes. Uncover, and bake for 15 more minutes.
